All Natural Marries with Bodacious Taste in Geraldine’s®
New Cookie Line

Jasper, GA, 06/02/08 Six months of testing were needed to develop the newest offerings from the Bodacious Food Company. Geraldine’s® has taken their popular Key Lime Cookie along with two new varieties of Wedding Cookies and formulated them with All Natural ingredients.

Each of these cookies boasts a unique blend of sugar coating developed for Bodacious Food Company. David Hays, company Chairman, attests,
“We have baked a key lime cookie for several years with “off the shelf” sugar coatings, but it included several ingredients not even close to our all-natural qualification. It took months of trial and error, but we have created a formula that tastes even better than the previous cookie. The coating clings well to the cookie and it’s 100% all-natural. It was the breakthrough we were looking for.”

Key Lime Cookies, “A Taste of the Tropics in Every Bite”, have been a best-seller for Geraldine’s® before the all-natural reformulation. They still infuse genuine key lime juices from Florida as well as a tango of sweet and tart flavors that make Geraldine’s® Key Lime Cookies an irresistible treat.

A customer request for a “Mexican style” wedding cookie led to the birth of the Santa Barbara Wedding Cookie. However, when Bodacious Food Company President and Chief Sales Honcho Cathy Cunningham Hays began discussions with clients about the new cookie, she realized that the flavor profile of a Mexican wedding cookie was not even as well-known as she initially thought. One common question Hays faced was, “Are they spicy?”

While it may be served at a spicy wedding ceremony, the product has evolved into one sweet cookie. Cathy Cunningham Hays remembered Santa Barbara as a beautiful locale for weddings; hence, the namesake of the cookies was born. Starting with a shortbread base, Geraldine’s® adds roasted pecans and cinnamon to give this sugar-coated cookie a Bodacious blast of flavor.

The Italian Wedding Cookie is another version of the new Geraldine’s® Bodacious cookie line. This cookie, also known as “butterballs”, has served as a staple of Italian desserts for years. Geraldine’s® version utilizes perfectly toasted almonds and a hint of amaretto covered by their custom sugar coating for a flavor that must be tasted to believe!

The three newly-introduced cookies are being added to Geraldine’s® popular line of All-Natural Cheese Straws. “With these new cookies, our entire product line is now all natural,” states Hays.

Customers are looking for “better for you” products. While this was Geraldine’s® goal, they would not sacrifice Bodacious taste in the process. “It’s got to be Bodacious to be Geraldine’s®!”
Geraldine’s® Bodacious Food Company, established in 1995, houses its bakery and production line in the Appalachian foothills of north Georgia, distributing its cheese straw and gourmet cookie varieties nationally in supermarkets, discount retailers and online. Yes, there is a “Geraldine”; Cathy’s mother is the namesake, as it was her recipe for cheese straws that launched the company.

Zen Rabbit Baking Company Introduces The Gratitude CookieTM
Palm Beach Gardens, FL (June 18, 2008) – The power of gratitude is now available in a delicious and edible form. The Gratitude CookieTM by Zen Rabbit Baking Company is a delicious cross between a butter and a sugar cookie. It also serves a greater purpose by including inspirational sayings in each box of thin, crunchy treats and encouraging eaters to reflect on something they are grateful for each time they reach for another.
Inside the box of one dozen cookies is a card with “Gratuities - Tips on Bringing More Joy to Your Life.” A variety of cards have been printed with different tips - “Focus on a diet of positive and inspirational information” - for example. On the back side of the card is the question “What are you grateful for today?” and space to fill in an answer.

“Most people are familiar with the power of gratitude concept, but in the chaos of everyday life, it’s easy to forget. The Gratitude CookieTM is an easy and delicious reminder to stop and reflect,” says Lori Saitz, Founder and Chief Executive Rabbit.

Cookie eaters can inspire others and share their gratitude stories at GratitudeCookie.com.
“In his book “Thanks: How the New Science of Gratitude Can Make You Happier,” Prof. Robert Emmons says the practice of gratitude can increase happiness levels by about 25%,” explains Saitz. “Our goal with this cookie is to help people focus on being grateful and thereby increase their happiness. Plus, this is a really good cookie!”

The Gratitude Cookie™ is available through GratitudeCookie.com or at select gourmet markets and tea houses nationwide. Wholesale orders can be made by calling 561.889.8195 or via email at orders@ZenRabbitCookies.com.
Made from natural ingredients and without hydrogenated oils or artificial flavors, colors or preservatives, The Gratitude CookieTM began as a family recipe. In 2003, Zen Rabbit Baking Company was established as a woman-owned business to help business people say “thank you” by giving cookie packages to their clients and colleagues. This new retail packaging is for distribution in gourmet and specialty food markets, coffee houses and tea cafes, hotels, resorts and spas. It will also be available online at ZenRabbitCookies.com.
Zen Rabbit believes that having the ability to read and comprehend what you read is certainly something to be grateful for. According to ProLiteracy Worldwide, 93 million adults in the U.S. and 800 million worldwide are functionally illiterate. A portion of company profits go to literacy organizations that work to help improve literacy rates around the world.
